Cooking Method

Step 1) Make X cut at the bottom of the tomatoes and remove the eye of the them. Add the tomatoes +Onion + chilies into boiling water and cook for 2 -3 minutes. Take it out from hot water and peel the skin of the tomatoes.

Step 2) Add the cooked onion and chilies and grind it to a paste. Then add the tomatoes and grind it coarse paste.

Step 3) Heat oil in a pan and garlic and cook until the raw smell is gone. Then add the onion tomato paste and cook for sometime until it thickens slightly.

Step 4) Taste the mix, if you feel its already too sour add 2 tbsp of tomato ketchup, else add more to suit your preference. I have added 4 tbsp of Tomato ketchup. Similarly add vinegar if required. Then add chili flakes, pepper powder and sugar to balance the sourness. Cook for a couple of minutes and finally add seasoning - basil and oregano and cook until it thickens.

That's it our delicious pizza sauce is ready to be applied over pizza. Refrigerate the remaining sauce and can be use later.
