Pani Puri is a famous Indian street food which has a sweet and sour taste loaded with crunchy outer Puri. This recipe can be made in no time, this makes a beautiful chat recipe which is enjoyed by all groups of people. Lets get started.

For Green Chutney | |
1/2 cup | Mint leaves |
1/2 cup | Coriander leaves |
1/2 inch | Ginger |
2-3 | Green Chilies |

1/4 tsp | Pepper |

For Tamarind Chutney | |
10-12 | strand Tamarind (1 cup) |
5-6 | Dates |
1/4 cup | Jaggery |
1/2 tsp | Chili powder |
1/4 tsp | Salt |
For Puri | |
1 cup | Rava / Semolina (160g) |
2 tbsp | Maida |
1/2 tsp | Salt |
1/3 cup | Water (approx) |
For Masala | |
1/2 cup | cooked Chickpea |
2 | boiled Potato |
1/2 cup | Chopped Onion |
1/2 cup | Coriander leaves |
1/2 tsp | Cumin powder |
1/2 tsp | Chili powder |
Salt to taste |
Cooking Method |
Step 1) Lets start with making Puri for Pani poori. Into a mixing bowl add Rava, maida, salt and gradually add water to make a stiff dough. Knead the dough for minimum 5 minutes and cover it with a damp cloth and let it rest for 30 minutes.
Step 2) Green Chutney / Pudina chutney.
Into a blender add mint leaves, Coriander leaves, Green chilies, Ginger, Pepper powder, cumin powder salt and lemon juice. Add required water and grind it to a smooth paste. Pass it through a filter and then add more water.
Soak the tamarind in water for 15 minutes and squeeze the pulp, add it to a pan and also add in dates, jaggery, chili powder and required salt. Let it boil for sometime. Once it thickens turn off the heat and let to cool. Grind it to a fine paste and keep it aside.
Step 3) Divide the dough into 2 portions and roll it thin. Cut cricles anf fry in on medium hot oil. Make sure to fry it until crispy / golden.
Step 4) Masala for Pani Puri.
Into a mixing bowl add potatoes and mash well. Then add in cooked chickpeas, cumin powder, chili powder, salt, chopped Onion, coriander leaves and mix well.
Step 5) Assembling:
Crack oped top of the puri and stuff the potato masala then tamarind chutney and the dip it in Pudina water and enjoy !!!!!!!!!
That's it our delicious Pani puri is ready to be served, Before serving garnish with sev and some coriander leaves on the top. Serve it immediately to maintain freshness and crispiness.
