|Quantity||Ingredients for Coffee Cake Recipe|
|1 cup||All purpose flour / Maida (130g)|
|1/4 cup||Unsweetened Cocoa powder (25 g)|
|1 tsp||Baking Powder|
|1/2 tsp||Baking Soda|
|1/2 cup||Hot Water|
|2 tbsp||Instant Coffee powder|
|1 tsp||Vanilla extract|
|1 cup||Butter (200 g)|
|3/4 cup||Powdered Sugar (125 g)|
|3 +3 tbsp||Chocolate chips or syrup|
|1/4 tsp||Vanilla extract|
Step 1) Coffee Mix:
Dissolve Coffee powder in hot water and keep it aside. I have used Bru instant coffee powder for this recipe , you can use any coffee you like.
Step 2) Wet Ingredients:
Now in a mixing bowl add egg and beat well. Then add milk, oil, vanilla extract, coffee water form step 1, sugar and mix until the sugar is dissolved.
Step 3) Dry Ingredients:
Sift all the dry ingredients together - all purpose flour, cocoa powder, baking powder, baking soda and salt and mix well with the wet ingredients.
Step 4) Baking:
I have used 3 - 7 inch pan for baking the cakes, it takes approximately 15- 17 minutes for me at 350 F / 175 C preheated oven. You can bake a single cake and cut it into 3 equal portions later.
Once the cakes are done let it cool completely.
Step 5) Butter cream frosting :
Into a bowl and 200 gram of unsalted butter (room temperature butter) and beat until it turns bright white (takes approximately 10 minutes on medium high). Now to this add powdered sugar and mix well.
Step 6) Then add melted chocolate (at room temperature) , milk and vanilla extract and mix well. Transfer it to a piping bag and set aside.
Step 8) Assembling the cake:
Baking Time and Temperature:
- Preheat the oven to 350 Fahrenheit or 175 Celsius
- Bake for 15 - 20 minutes ( for 7 inch pan, I have used 3 7 inch pans)
