| 1 cup | Chana Dal / Kadalai Paruppu |
| 3/4-1 cup | Jaggery / Vellam / Palm Sugar |
| 1/2 cup | grated Coconut |
| Pinch of | cradamom powder |
| 2 tbsp | Ghee / Clarified butter |
| For the batter | |
| 1/2 cup | All purpose flour / Maida |
| 2 tbsp | Rice flour |
| pinch of | Salt |
| required | Water |
Cooking Method |
Step 1) Cooking Dal:
Soak Channa dal / Kadalai Paruppu in water for 2 hours. Transfer the soaked dal into a cooker and add water and cook the dal for 4 whistles on a medium heat or until it is fully cooked.Since we have already soaked the dal it will be ready in 4 whistles if you haven't soaked the dal then cook it for few more whistles.
Meanwhile in a separate pan melt ghee and add grated coconut and saute it for few seconds until the coconut tuns golden. Adding Coconut enhances the taste of the poornam.
Step 3) Adding Jaggery:
After cooking the dal add grated jaggery and cook until it thickens. If you are not sure about the quality of jaggery then melt jaggery in a separate pan by adding very little amount of water, filter and then add it to the dal.
Step 4) Making Poornam:
Once the dal and jaggey mix thickens add the roasted coconut and cardamom powder and cook until fully thickened. You should be able to hold shapes. The poornam should be stiff and should not fall. Once you get this consistency turn off the heat and let it cool for sometime.
Step 5) Making Balls:
once the poornam is completely cooled take a portion of the poornam and shape it into medium sized balls. This recipes makes 16 - 18 balls.
Step 6) preparing the batter:
In a bowl combine Maida / All purpose flour , rice flour, pinch of salt and add water to form a semi-thick batter. Batter should not be runny it should be thick enough to coat the poornam.
Step 7) Frying the Susiyam:
Take a poornam , dip it in the batter and make sure all the sides are nicely covered by the batter. Drop the susiyam in hot oil and fry until the outside is cooked and turns crispy. It will not take more than a minutes. It get fried really fast so keep an eye on them.

Notes:
- Since we have already soaked the dal for 2 hours it will be ready in 4 whistles, if you haven't soaked the dal then cook for few more whistles.
- Do not lot of water while cooking, if we too much of water then it will take longer time to get into the proper consistency.
- If the dal is not completely cooked and if you feel some grainy texture after cooking then grind it in a blender to make a paste and then add jaggery and cook.
- We can also use pasiparuppu / green gram instead of Kadali paruppu / chana dal and the one made with Pasiparuppu is know as Modaham.
- We can also add nuts to the poornam to make it even rich.
Susiyam is a traditional sweet of south India which is both healthy and tasty. it is made with kadalai paruppu / Channa dal and jaggery.It has a crispy texture on the outside with is made with all purpose flaour and rice flour to add extra crispiness.
