Vendakkai Poriyal / Lady's Finger Fry

Vendakkai proyial is a healthy and an excellent side dish for plain rice and variety rice recipes. This recipe can be made with just few ingredients in a short time. I do not like sticky ladys finger , when my mom prepared this method I immediately fell in love with this roasted poriyal and I am loving it.

Quantity Ingredients for Vendakkai Poriyal
25 Vendakkai / Okra / Lady's finger
3 tbsp Oil
1/4 tsp Mustard seeds
1 tsp Urad Dal
1 spring Curry leaves
10 - 12 Shallots (or 1/4 Onion)
1/4 tsp Turmeric 
1 tsp Chili powder

Salt to Taste

Cooking Method


Step 1) Heat oil in a pan and add mustard seeds, Once the seeds pops out add urad dal and curry leaves . Then add chopped shallots and saute it for a minute. We can also use 1/4 regular onions instead of shallots.


Step 2) Next add the lady's finger and saute it for 2 more minutes. Use tender ones to get best results. Next add turmeric and chili powder , required salt and mix well.


Step 3) Do not add any extra water, let is cook until done. I like roasted poriyal so I have cooked until it golden brown.
