Rice Pudding Recipe / Rice Kheer

Any Indian meal is incomplete without dessert or sweets, Rice Pudding also Know as Rice Kheer is an easy dessert recipe which is a quick fix for our sweet cravings, it is a classic and traditional Recipe of India which is not only famous in Indian but all around the world, it is very simple and all we need it just few basic ingredients. This recipe can be made with both short grain or long grain rice, I used long grain basmati rice to make this delicious rice pudding. Added nuts enhances the taste of the kheer and it literally melts in your mouth.


Serving Size           : 3- 4 people 

Preparation Time  : 20 minutes

Cooking Time        : 30 - 40 minutes

Quantity Ingredients for Rice Pudding
1/4 cup Rice (I have used Basmati Rice)
1 liter Milk (4 cups approximately)
5-6 tbsp Sugar
1 tbsp Cashews
1 tbsp Almonds
1 tbsp Pistachios
1 tbsp Raisins
few Saffron
4-5Cardamom pods

Cooking Method


Step 1) Boiling Milk:
Heat milk in a pan and bring it to boil, try to use whole milk / full fat milk for this recipe.
Once the milk has started boiling add the rice. We can use both short or long grain rice, wash and soak the rice in water for 20 -30 minutes. Add the rice and let it cook completely.
     * Reduce the heat to medium -low 
     * Scrape the sides of the pan and add it to the milk
     * Stir the milk often for every 3- 4 minutes to prevent the rice from sticking to the bottom of the pan


Step 2) Powdering Nuts:
While the rice is cooking lets powder some nuts - Cashews, Almonds, Pistachios and keep it aside. 


Step 3) Adding Sugar :
Once the milk has reduced and rice is fully done add sugar, you can adjust according to your sweet preference.Also add in the powdered nuts, Raising and mix well.


Step 4) Flavoring:
Finally add crushed cardamom pods and few strands of saffron to get nice flavor and color. Mix it well and let it cook for few more minutes.


Once the milk is reduced fully and the rice is nice and soft (it breaks down into tiny pieces) turn off the heat and allow it to cool completely before serving.
That's it our Rice Pudding / Rice Kheer is nice and ready.You can garnish it with rose petals or some nuts on the top.

    4. once the rice is fully done add the sugar, powdered nuts, raisins
    5. Finally add saffron and cardamom
    6. Our Rice Pudding / Rice Kheer is ready to be served.
