Masala Vadai Recipe / Paruppu Vadai

Masala Vadai also known as Paruppu Vadai is a staple dish of Tamil Nadu which is made often as an evening snack or as a side for break fast. A cup of hot tea on the left with some crispy masala vadai on the right makes the day complete and we feel more relaxed and lightened when we bite into this crispy delicacies. This recipe is a healthy evening snack made with channa dal / kadalai paruppu and the added spices makes this vadai taste heavenly. 
This is really quick and simple to make, Whenever I feel bored the first thing I make to boost myself is this delicious masal Vada and a cup of tea, lets start the preparation.

Quantity Ingredients for Masala Vada Recipe
1 cup Channa Dal / Kadalai Paruppu
1 Cinnamon Stick
5-6Garlic Cloves
1  inch Ginger
5-6 Green Chilies
1 tsp Fennel seeds
Onion
3 tbsp Coriander leaves
1 springCurry leaves

Salt to taste

Oil for frying

Cooking Method


Step 1) Soaking:
Wash and soak Channa Dal / Kadalai Paruppu in water for 4 hours. Minimum 3-4 of soaking the dal is mandatory for nice masal vadai.


Step 2) Flavoring:
In a blender add Cinnamon stick, Garlic, Ginger, Green chilies, fennel seeds and grind it coarsely. 


Step 3) Grinding:
Now add the soaked dal , drain all the excess water, do not add water while grinding. Grind it into coarse paste(give it few pulses), if you see some whole dal here and there that is absolutely fine (do not grind too fine), Whole dal adds more texture and taste to the vadai. 


Step 4) Mixing:
Transfer the ground dal to a bowl and add finely chopped onions, Coriander leaves, curry leaves and required salt. Mix all the ingredients together well.


Take a small portion of the vada mix and make a ball, then place the ball at your palm and press it with your other hand to flatten a little bit.



Step 5) Frying:
Once the oil is hot add the vada one by one into the oil and fry until golden brown, flip it once in the midway.

Ingredients:
  • For Masala Vada Recipe

Instructions:

  1. Soak Channa Dal in water for 4 hours
  2. Grind all the spices first
  3. Add dal and grind it coarsely
  4. Mix onion, coriander , curry leaves with the dal
  5. Make medium sized vadas and fry in hot oil until golden brown
  6. Our Crispy Masala vada / Paruppu Vadai is ready to be served hot with hot tea / coffee
