Carrot halwa is a delicious sweet recipe made with just few ingredients - carrot milk and sugar. Not like other halwa recipes this carrot halwa can be made quickly in few minutes, the process is simple and straight forward, it is easy to follow as well. This recipe is enjoyed by both kids and adults its healthy too.. Whenever I have leftover carrots in my fridge, I immediately do this delicious carrot halwa to lighten my taste buds.
We can follow the same procedure for making beetroot halwa.

Serving Size          :  4

Preparation Time : 10 minutes

Cooking Time       : 30 min

Difficulty

Quantity Ingredients for Carrot Halwa Recipe
3 cup Grated carrot (4-5 large carrot)
4 tbsp  Ghee
3/4 cupSugar (we can add up to 1 cup)
2.5 cup Milk
1 tbsp Cashews
1 tbsp Raisins
1/2 tsp Cardamom powder

Cooking Method

Step 1) Melt 2 tbsp of ghee in a pan and roast the cashews, once they turn golden add the raisins and saute it until the raisins are ballooned. Take it out of the pan and keep it aside.

Step 2) Now in the same pan add the grated carrot and saute it for 2 -3 minutes until the carrot changes its color a little bit to pale orange.

Step 3) Then add milk (you can add 1:1 milk:water) but I always prefer to use milk to get rich and creamy carrot halwa. We need to add more milk to get rid of the raw smell of the carrot.
Stir it in between to prevent from burning also scrape the edges to pull in any milk settlements.
Cook on a medium heat

Step 4) Once it thickens a bit add the sugar and mix well. the mixture loosens as soon as we add sugar. Keep it on a medium heat an cook until everything thickens.

Step 5) Now add cardamom powder to get nice flavor, roasted nuts from step 1, also add the rest of the ghee (2 tbsp) and mix well. Cook for few more minutes and turn off the heat.

That's is our carrot halwa is ready to be enjoyed. You can add some nuts on the top to make it attractive. Please do try the recipe and enjoy with your friends and family
