Chicken Pulao Recipe

Chicken Pulao is a famous recipe of India which is quite easy to make and it tastes delicious. This Chicken Pulao recipe is made in one pot which makes the dish more flavorful because both the chicken and the rice are going to get cooked in the same vessel and all the flavors from the chicken are infused into the rice and the rice tastes absolutely wonderful. In this recipe the chicken is well seasoned first and then added to the rice to impart nice taste and flavor.
A perfect recipe should have individual grains of rice and should not be sticking to one another,the ratio of rice to water is very important to make prefect pulao, lets see how to make this simple and easy chicken Pulao.

Quantity Ingredients for Chicken Pulao Recipe

For Marinating the Chicken
1/2 Kg Chicken with bones
1/2 cup Yogurt / Curd
1 Tbsp  Chili powder 
1 tsp Garam masala powder
1/2 tsp Turmeric powder
1 tbsp Ginger Garlic paste

Salt

For Chicken Pulao
2 tbsp Ghee / Clarified Butter
2 Tbsp Oil
2 bay leaves , 3 cardamom , 4 cloves , 
1 Cinnamon Stick , 2 Start anise
10 -12 Pepper corns
4 Green Chilies
1 largeOnion
Tomato
2 cup Basmati Rice
3 cup Water   
Handfull coriander and Mint leaves

Salt to taste

Cooking Method


Step 1) Marinating the chicken:
In a mixing bowl add the cleaned chicken pieces and add yogurt, ginger garlic paste, turmeric powder, garam masala, red chili powder. Mix well and coat the chicken pieces well with the masala. Marinate for 20 - 30 minutes.


Step 2) Whole Spices:
In a heavy bottom pan melt ghee and oil (ghee imparts nice flavor and taste to the recipe).Then add the whole spices - bay leaves, cinnamon, cardamom, star anise, cloves and pepper corns. Mix it once and then add green chilies and sliced onions.


Step 3) 
Once the onions turns golden add chopped tomato and cook for few minuted until soft. Then add the marinated chicken pieces and cook for 5-6 minutes.


Step 4)
Once the chicken is half done add the soaked basmati rice (rinse the rice in water for 3 times and soak for 20 - 30 minutes, drain the water completely before adding the rice) . Mix it well with the chicken pieces .


Step 5) Water:
The ratio of rice to water is 1:1.5 so for 2 cups of rice we will need 3 cups of water. Also add required salt, mint leaves and coriander leaves mix it once . Cover and cook until all the water has been absorbed by the rice or until the chicken and rice are fully cooked. 
If you are using a pressure cooked then cook for 1 whistle on a medium heat.


Step 6) Chicken Pulao:
Once the rice is fully cooked and you start to smell the nice aroma of the pulao turn off the heat and gently and slowly with a flat spoon fluff the rice.

Notes:
  • Always use chicken with bones to get nice taste.
  • If you are cooking in pressure cooker then cook for 1 whistle.
  • If you don't like adding tomatoes then you can skip, instead add juice of half lemon.
  • Use medium sized chicken pieces (little smaller than the one which we use for making chicken biryani)

    For Marination

  • 2 cup Basmati Rice

Instructions:
  1. Marinate the chicken
  2. heat oil and add the whole spices
  3. saute onion and tomato, add the marinated chicken
  4. once the chicken is half done add the rice and cook until fully done
  5. Chicken pulao is ready to be served hot with onion raita
