Chicken Fried Rice is an Indo-Chinese recipe which is not only popular in India and China but all over the world and is enjoyed by all groups of people. This fried rice is one of the most ordered dish in restaurants during dinner service. The secret in perfect Fried rice is getting the rice cooked correctly and the rice should not be sticking to one another. It is a combination of crisp cut vegetables, scrambled eggs and small pieces of fried chicken.Since we have cut the chicken into bite sized pieces we can enjoy a piece of chicken in every bite. You can discard chicken and make it egg Fried Rice.

5 large | Eggs |

2 tsp | Chili Sauce |
2 tsp | Soy Sauce |

Cooking Method |
Step 1) Cooking Rice:
Soak the Basmati rice in water for 1 hour and cook in water with some salt until the rice is 90% cooked..Do not over cook the rice..To get perfect strands add a tbsp of water into the boiling water before adding the rice.This prevents the rice from sticking to one another.Once 90% cooked spread the rice on a paper towel to remove any moisture from the rice or keep under fan.This step is very important to get the best fried rice with single strands of rice.
Step 2) Frying Chicken:
Cut Chicken into small bite size cubes and season it with some salt , chili powder and pepper. Fry the chicken in oil until golden and crispy on the outside.
Step 3) Scrambled eggs:
Heat oil in a kadai and add eggs to it, add a pinch of salt and scramble the eggs.Once done transfer the scrambled eggs to a bowl.
Step 4) Cooking Veggies:
Again in the same pan heat oil and add the veggies- Carrots, Cabbage, Beans and cook until the veggies are 80-90% cooked do not overcook the vegetables we still need to retain some texture of the veggies. Then add required salt, chili sauce, Soy sauce and mix it again.
Step 5) Making Chicken Fried Rice:
Then add the cooked basmati rice , scrambled eggs and the fried chicken. Mix everything very gently and carefully. Do not break the rice.After mixing it add freshly ground pepper and some spring onions for garnishing and turn off the heat.
