Nei Appam Recipe

Nei appam / Sweet Paniyaram is a traditional recipe of South India especially most popular in the states of  Tamil Nadu and Kerala.It has a crispy outer layer and stays soft and yummy inside. Nei appam is made with rice flour and jaggery and there are lots of combination we can experiment with some people love to add coconut, Karupattai and my Aunt always adds mashed banana to it to get so that we get very soft appam. My grandma makes this sweet for every Christmas and as soon as she takes it off from oil myself and my sister start to dig into the bucket and finish it off very soon.This recipe is quite easy to make and it will never fail on you. All we need is just few basic ingredients for making this sweet Paniyaram. Lets see how to make this delicious paniyaram with easy steps.

Serving Size              :  3 people(makes 7-8)

Preparation  Time    : 4 hours for soaking
                                      2 hours for resting

Cooking Time           : 20 minutes

Quantity Ingredients for Nei Appam Recipe
1 Cup Raw Rice
3/4-1 CupJaggery / Palm Sugar
Cardamom Pods
2 Tbsp  Wheat flour
2 TbspGhee / Clarified Butter
1/4 tspBaking powder

Oil for Frying

Water(1/4 cup for jaggery + extra for batter) 

Cooking Method


Step 1 ) Preparing Rice flour:
Soak raw rice in water for 4 hours , after 4 hours drain the water completely and spread it on a cloth and let it sit for 20 minutes to get get rid of the excess moisture.Then add it to a blender and also add cardamom pods along with this and grind it to a fine powder. (if you have cardamom powder then you can directly add it to the batter later) 


Step 2) Preparing Jaggery Syrup 
In a pan melt powdered / grated jaggey with 1/4 cup of water. We are not looking for any consistency just melt  the jaggery until completely dissolved.Grate or powder the jaggery before adding so that it dissolves soon and evenly. I have taken somewhere between 3/4- 1 cup of jaggey.


Step 3) Preparing the batter for Paniyaram:
In a bowl combine raw rice flour, jaggery (strain it through a filter to remove any dirt ), wheat flour, baking powder and ghee.Mix well and then gradually add water and make it into a batter (Pouring consistency) be careful while adding water do not add too much water. After mixing everthing together let it rest for 2 hours.

Step 4) Making Nei Appam:
After 2 hours check the batter, if it is hard then add a little bit of water and mix well.(pouring consistency-slightly thicker than dosa batter consistency).
Heat oil in a kadai and pour a ladle of batter and deep fry them until you get nice golden brown color on the outside and until the sides turns crispy.Do not fry it for a long time it makes the panirayams hard.

Notes:

  • You can also add one banana to the batter to get even softer paniyaram.
  • You can use small kuzhi paniyaram mold to make this Nei appam
  • Use a curved bottom pan for frying the appam to get that bulging shape.
  • You can also fry them in Ghee to get enhanced flavor and taste or (1.2 oil +1/2 ghee).

Ingredients:
  • For Poornam:
  • 1 Cup Raw Rice
  • 3/4-1 Cup Jaggery / Palm Sugar
  • 5 Cardamom Pods
  • 2 Tbsp Wheat flour
  • 2 Tbsp Ghee / Clarified Butter
  • 1/4 tsp Baking powder
  • Water(1/4 cup for jaggery + extra for batter)
  • Water
Instructions:
  1. Soak RIce flour in water and grind it to a fine powder
  2. Melt Jaggery in a pan with some water
  3. Combine all the ingredients and add water to make batter
  4. Rest it for 2 hours
  5. Fry the paniyaram in oil until all the sides are crispy and golden
  6. Make thick batter by combining Rice flour, maida,turmeric,salt and water
