Chicken Kathi Roll Recipe

Chicken Kathi roll is a very famous dish in north of India and it is sold almost in every streets. It is a great evening snack and you can serve this for dinner as well. There are lots of variations we can make with the stuffing I have made an easy chicken stuffing which tastes wonderful and is fulfilling. You can play with the spices and make a spicier version as well.You can also make vegetarian version just by replacing chicken with paneer, potato, mushrooms and lot more. This Chicken Frankie can be made easily and you get the taste of the stuffing in every single bite.I have added onions at the end to give extra crunchiness and serve this chicken Frankie with ketchup or mint chutney.

Quantity Ingredients for Chciken Keema Samosa

For the Kathi Roll Sheet
1 Cup All purpose flour / Maida
1/4 cupWheat flour
1 Tbsp Oil

Salt to taste

Water as required

For Chicken Filling
250gChicken
1/2 tsp Cumin Seeds
1 Tbsp Oil
1Onion
1 tspGinger Garlic Paste
1Tomato
1 tspGinger Garlic Paste
1/4 tspTurmeric Powder
1/2 tsp Garam Masala powder
1-2 tspChilli powder
1/2 tsp Cumin Powder
1 tsp Chat Masala
1 Tbsp Lemon Juice
2Eggs 

Coriander leaves

Salt to Taste

Cooking Method



Step 1) Kathi Roll Sheet:
In a bowl combine Maida, wheat flour, salt ,oil and mix it well.now to the mixture slowly and gradually add water and start to knead.Knead it into a very soft and smooth dough.The dough should not be hard.After kneading Cover and let it rest for 20 minutes

Step 2) Chicken Stuffing:
Heat oil in a pan and once the oil is hot add cumin seeds and then add 1 chopped onion some salt and saute it for few seconds.Once the onions are translucent add the masalas Ginger garlic paste , chili powder, garma masala , cumin powder and chat masala and mix well.Then add chopped tomato and cook for some time.

Step 3)
Once the tomatoes turns soft add the chicken pieces cut into very small pieces, juice of half lemon and mix it well with the masalas and and cook for 5-6 minutes or until the chicken is fully cooked and becomes dry. Finally add some chopped coriander leaves and turn off the heat.

Step 4) 
Now after 20 minutes divide the dough and the stuffing into 3 equal portions and start to roll a dough. Sprinkle some flour on the top so that the dough doesn't stick to the rolling pin and it will be easy for us to roll.After rolling into a very thin sheet cover the rotis in a damn cloth to prevent from drying.
We also need 2 eggs for this recipe so beat 2 eggs and keep it aside.


Step 5) 
Heat a tawa and grease it with some oil, Heat should be on a low stetting otherwise the roti will become hard soon. Place the roti and again apply some oil on the top and immediately flip it to the other side. Pour 1/3 of the beaten eggs on to the top of roti and spread it all over the sheet.Cook it for few seconds and flip it to the other side and cook for another few seconds until you see nice golden spots on the bottom side.

Step 6) Chicken Kathi Roll:
After making Roti place the chicken stuffing at the center of the roti and also place some sliced onions to get that crunchy taste and start to roll from one end. After rolling cut the roll into 2 halves.

You can add coriander or mint chutney at the center to get that refreshing flavor. If you are a great fan of mayonnaise then you can spread a layer of mayonnaise on the roti and ten stuff it with chicken that tastes even delicious. Ingredients:
  • For the Frankie Sheet
  • 1 cup All purpose flour / Maida
  • 1/4 cup Wheat flour
  • 1/4 cup Wheat flour
  • Salt to taste
  • water
  • For Chicken Stuffing
  • 250 g Chicken
  • 1 tbsp oil
  • 1/2 tsp cumin seeds
  • 1 onion
  • 1 tomato
  • 1 tsp Ginger garlic paste
  • 1/4 tsp Turmeric powder
  • 1 tsp Chilli powder
  • 1 Chat masala powder
  • 1/2 tsp Garam Masala Powder
  • 1/2 tsp Cumin powder
  • 1 tbsp lemon Juice
  • Salt to taste
  • Coriander leaves
Instructions:
  1. Make dough by kneading flour, oil, salt, water and form a soft dough
  2. Add to oil in a pan, Cumin seeds,Onion, masalas and tomato 
  3. Add the chicken,lemon juice and cook well
  4. divide the dough into 3 portions and spread the dough
  5. Heat a tawa and place the roti and spread a layer of egg
  6. Once the roti is done place the chicken stuffing at the center and also add some sliced onions and roll the sheet
  7. Serve the delicious Chicken Frankie with with coriander chutney and Ketchup.
