Pepper Chicken Recipe

Written By Angela Steffi on Friday, October 14, 2016 | 9:28:00 AM

Pepper Chicken is an easy and a Spicy Recipe which can be made in less 20 minutes. We only require a few basic ingredients for making this Pepper Chicken. In this recipe we are not going to add any chili powder, all the heat is given by the pepper we add.Always use freshly ground spices for making this Chettinad Pepper Chicken because freshly ground pepper enhances the flavor and aroma of the recipe.
My Grandma always prepare this spicy pepper chicken when I catch cold and she says that pepper has good medicinal value to cure cold, I don't want to analyse any further whether it is true or false because I love enjoy eating her Pepper Chicken.

Serving Size          :  3 people

Cooking Time       : 20 mins

Difficulty: Spice Level:

Quantity INGREDIENTS

1/2 kg Chicken (with or without bones)

To Crush
2 TbspPepper Corns
1 tsp Fennel Seeds
1 tsp  Cumin Seeds

For Pepper Chicken Recipe
1 inchCinnamon stick
3 Cloves
Dry Red Chilies
1  Tbsp Ginger (Chopped)
1 Tbsp  Garlic (Chopped)
2Onions (250g)
3 Green chilies
1/4 tsp  Turmeric powder
3 TbspOil

Salt to taste
Curry Leaves for Garnishing

Cooking Method

Step 1) Crush the pepper corns, Fennel seeds and cumin seeds in a mortar and pestle (you can also use blender to seep up the process) Freshly ground pepper has lot of flavor in it so for making this pepper chicken always grind them freshly.2 tbsp of pepper will be a little spicy so adjust according to your spice level.

Step 2) Heat oil and once the oil is nice and hot add cinnamon stick, cloves and dry red chilies and also add chopped ginger and chopped garlic.Give it a stir and then add the chopped onions.Add some salt to speed up the cooking process and we need to saute the onions until they are nice and brown.Only then we will get that awesome color.

Now you can see the onions are nice and brown at this point add turmeric powder, Green chilies and the freshly ground pepper mixture.Mix that in and after mixing add the chicken pieces. And mix it well with the onions. We need to roast them in medium flame for 10-15 minutes depending on the size of the chicken pieces.
