Vegetable Fried Rice

Vegetable Fried Rice is a popular Indo-Chinese dish often had in most of the restaurants.This vegetable fried rice is quite easy to make at home and tastes several times better than the one which we order in all fancy restaurants.The only problem which many face is the consistency of the rice, toady we will see how to get the perfect rice for the fried rice. Here in this recipe we are moving a step ahead and add a whole new taste and style .......Yes we are going to make this fried rice special by adding fried potatoes.

Quantity INGREDIENTS
1 Cup Basmati Rice (soak for 1 hour)
1 large Potato
3 Carrots
1/2 Cabbage
15-20 Beans
1 tsp Chili Sauce
1 tsp Soy Sauce
1 tsppepper powder
HandfullSpring Onions

Water

Salt to Taste

Cooking Method



Step 1) Soak the Basmati rice in water for 1 hour and cook in water with some salt until the rice is 90% cooked..Do not over cook the rice..To get perfect strands add a tbsp of water into the boiling water before adding the rice.This prevents the rice from sticking to one another.Once 90% cooked spread the rice on a paper towel to remove any moisture from the rice or keep under fan.This step is very important to get the best fried rice with single strands of rice.

Step 2) Cut potatoes into small little cubes(blot it with a paper towel to remove any excess moisture) and add slat and chili powder to season.Fry the potatoes in oil until golden and crispy on the outside.

Step 3) Heat some oil in a pan,add Carrots, Cabbage, Beans and cook until the veggies are 90-95% cooked do not overcook the vegetables we still need to retain some texture of the veggies.Then add required salt, chili sauce, Soy sauce and mix it again.You can also use capsicum if you like.

Step 4) Then add the cooked basmati rice and the fried potatoes. Mix everything very gently and carefully.Do not break the rice.After mixing it add freshly ground pepper and some spring onions for garnishing.
